Soy sauce1 tbsp🫙

Beat eggs and scramble in a hot wok with a little oil. Remove and set aside.

Add more oil to the wok. Stir-fry diced carrot for 2 minutes, then add peas and char siu.

Add cold cooked rice, breaking up any clumps. Stir-fry on high heat for 3-4 minutes.

Return eggs to the wok. Season with soy sauce and sesame oil. Toss well and garnish with spring onion.
