Cut beef brisket into 3cm chunks. Blanch in boiling water 5 minutes, drain.

Brown brisket in oil. Add garlic, ginger, star anise, and bay leaves. Stir-fry 2 minutes.

Add soy sauce, oyster sauce, rock sugar, and enough water to cover. Braise on low heat for 1.5-2 hours.
