Prepare soy sauce marinade: mix soy sauce, dark soy sauce, oyster sauce, sugar, garlic, ginger, and star anise.

Submerge whole chicken in the marinade. Bring to a boil, then simmer on low heat for 25-30 minutes.

Turn off heat and let chicken sit in the sauce for another 15 minutes. Remove and let cool slightly.

Chop chicken into pieces. Serve over steamed rice with the soy sauce drizzled on top.
