Melt-in-your-mouth pork belly slow-braised in soy sauce, sugar, and spices until deep amber and glossy.

Cut pork belly into 2cm thick slices. Blanch in boiling water 5 minutes, drain.

Caramelise sugar in a wok until amber. Add pork belly and coat with caramel.

Add soy sauce, dark soy sauce, rice wine, star anise, and water. Braise on low heat for 1.5 hours.

Serve braised pork belly over steamed rice. Drizzle with the braising sauce.
