Light, refreshing barley water — mildly sweet with a gentle grain flavour, traditionally served as a cooling drink.

Cooking Steps

Rinse pearl barley under cold water. Soak for 30 minutes.

Bring 1.5 litres of water to a boil. Add barley and reduce to a simmer.

Simmer for 45-60 minutes until barley is soft and water is milky.

Sweeten with rock sugar to taste. Serve warm or chilled.
