Pat salmon fillets dry. Season with salt, pepper, and a drizzle of olive oil.

Heat a grill pan or oven grill to high heat. Grill salmon skin-side up for 3-4 minutes.

Flip and grill for another 3-4 minutes until just cooked through with a slightly pink centre.

Make lemon butter: melt butter with lemon juice, zest, and capers. Pour over salmon. Serve with vegetables.
